Angel Bake Pure Bulgarian Lavender Extract is a different creature from French or English lavender. Bulgarian Lavandula angustifolia is prized for a clean, sweet, floral aroma that is naturally lower in camphor and higher in the compounds behind lavender's floral sweetness. The result is sweeter, more elegant, and food-friendly, with no soapy or medicinal harshness. This is the lavender pastry chefs prefer because it behaves beautifully in food. Its floral sweetness shines in shortbread, sugar cookies, cakes, scones, buttercream, and glazes, and blooms in cold applications like ice cream, gelato, panna cotta, whipped cream, and pastry cream. It pairs classically with fruit, from strawberry and raspberry to peach, lemon, and pear, and adds an aromatic lift to lavender lattes, cold brew, lemonade, sparkling water, and cocktails. Lavender, lemon, and honey is a perfect trio. Concentrated and consistent, it delivers the fresh floral aroma that dried lavender loses.
